I love my cast iron skillets but I've given up cooking eggs in them. I have to scrub the damn pans so hard afterward to remove the egg residue that it takes off all the seasoning. Tips?
This will sound ridiculous but I learned it from my dad. He wiped out his iron skillets with table salt on a paper towel or dish rag. No water or soap. He also warned me not to fry potatoes in a skillet and then try to make eggs. His iron pans were shiny black when they passed away and my sisters and I argued over who got them. Those pans were over 50 years old at the time.
The waiterrant archives are a good place to start. He's a pretty decent writer and has even published a few books.
He actually saved a doctors life once by Heimliching him and the guy still stiffed him on the tip. (Doctors are notoriously bad tippers.) Incredible stuff.

I only have experience with New York Jews. I have to say they are not all that bad. Except when they are. But I'll take them over the tourists. Tourists are too unpredictable. Especially the Europeans and the Brazilians.
Tonight was Bad. I was basically gang raped by 34 foreigners.

The city is full of tourists this week, and all the New Yorkers with money to spend, are spending it in the Caribbean. Monday was a rough night, they all fucked me. I had a $2 tip and a $0 tip. The rest sucked too.

Marc, c'mon brother, I know you're fucking around. There's a lot good people that make their living as professional servers and bartenders. A good server in a top restaurant can easily earn 100k+ a year. I know some that do exactly that. It is a lifestyle though with plenty of positives and negatives like any job. Don't be hatin' broheim.
