"MythBusters" can be a lot of fun. They've slowed down a little in later seasons, but Adam and Jamie still carry the show.
The "Adult Swim" portion of Cartoon Network is good sometimes - they rerun old episodes of "Home Movies" on a regular basis.
"Home Movies" is what you'd get if Oscar Wilde and Woody Allen collaborated in grade school on a Flash animation project.
AMC and TMC are both great for catching older movies - AMC has commercials but doesn't overdo it the way the network channcels or superstations like TBS or WGN do. TMC is commercial free.
I like IFC because they will show some real sleeper stuff on the off hours - I've seen "Ichi The Killer", "Man Bites Dog",samurai films, the "Coffin Joe" trilogy, even movies like "New Rose Hotel" (which has the distinction of starring but Willem Defoe and Christoper Walken and STILL managing to suck.)
