I cooked a steak one night, and the bag had opened so it was floating free and clear. Crap. But I dried it off and seared it up, and frankly it tasted fine. So maybe the whole bag thing is BS anyway.

I am going to make venison this Sunday, will report the results. Haven't decidedd on the particulars yet. It's the piece of the leg, probably will make it shredded/pulled style. In that case rub it first, SV for 24 hours, then pull apart and stir in some sauce.
